Description
Halkidiki is a classic Greek green olive. It is characterized by juicy crispy flesh and refreshing sourness. Olives of the Halkidiki variety are easy to distinguish by their sharp tail and natural green color, which is characteristic of olives harvested in September - October. Olives got their name from the area in which they are grown, namely in the Greek region, which is considered a region of Central Macedonia, Halkidiki. Magnificent table olives are of high quality and quite large in size. This product is considered a delicacy along with such foods as dried tomatoes, blue cheese, almonds and others and is used as a snack, not as a main dish.
Our Halkidiki olives ripen naturally on trees, so their color can be heterogeneous from light green to dark olive, brown. The color saturation varies depending on the location of the olive on the tree in relation to the sun. Natural maturation also determines the long process of cooking olives and the cost of the final product. Since olives are harvested while they are not yet fully ripe, their oval-shaped flesh is very elastic, juicy (fleshy) with a small bone. The olives themselves range from a bright yellow-green color to a rich yellow hue (by the time of ripening). Halkidiki olives are harvested from mid-September to the end of October.
After harvesting from September to October - at least 2 months - olives are freed from bitterness. They are kept in sea salt, then washed, then a traditional pickle is prepared, used only for olives of the Chalkidiki variety, and olives are kept in it. These processes are repeated several times. As a result, we get an absolutely natural, delicious and very healthy product rich in unsaturated fatty acids, proteins, vitamins B, C, E, P, potassium, phosphorus and iron.
Having a juicy pulp and an easily separated bone, Halkidiki olives are served as an excellent snack, including cocktails, an excellent ingredient for salads and a wonderful addition to other dishes. The taste of this variety of olives is full, spicy, and also moderately bitter aftertaste with notes of fruit flavors and without any hint of oiliness.
