The taste of fresh tomatoes is preserved in all KYKNOS products, because the time that passes from harvesting to receiving the final product does not exceed 6 hours. The pasta is made from tomatoes harvested at the peak of maturity in an ecologically clean region of Greece. KYKNOS tomatoes are distinguished by the absence of genetic modification to adapt to the climate — only those varieties are grown that are naturally capable of yielding the best harvest in the Greek climate.
The Kyknos Greek family business is run by the Mannusakis family in the 4th generation. Tomato paste is a product made from heat—treated tomatoes. In the process of its production, ripe tomatoes are peeled from the skin and seeds, after which they are boiled. During cooking, the moisture contained in tomatoes evaporates, and the concentration of dry substances increases. Thus, the greater the proportion of dry substances in this product, the better it is.
The main use of tomato paste is in the content of lycopene (up to 1600 mg / kg). Lycopene is a pigment due to which tomato has a bright red color, it has unique antioxidant properties. In the prevention of eye diseases, as well as cardiovascular, oncological diseases, lycopene is necessary.
Tomato paste already contains sweetness, and it's very easy to reveal it — fry it in a frying pan with a drop of vegetable oil. Thus, the paste will warm up and become much more tender.
In accordance with Russian legislation (GOST 3343-89), the concentration of dry substances in tomato paste should be at least 25% -40%, the paste at such a concentration is thick. No additional ingredients are ever added to a good quality pasta, since tomatoes already contain everything you need, including sugar and salt.
You should take the paste from the jar only with a clean spoon. To prevent the paste from spoiling for a long time, pour a thin layer of vegetable oil after each use. For example, Extra Virgin olive oil will not change the taste (or any other) qualities of tomato paste in any way.
